Africa: Equatorial Guinea Boiled Yams

 

INGREDIENTS:

2 lbs. white yams peeled and cut into chunks

2 tablespoons palm oil

salt to taste

 

INSTRUCTIONS:

In a stock pot of boiling water, add the yams and cook until tender about 30 minutes

mash with a fork or mixer and add in the palm oil or butter can be substituted.
 
Add salt to taste
