Africa: Guinea: Guinean Maffi Gumbo (Stewed Okra)

 

INGREDIENTS:

2 Cups Fresh Okra, cleaned, capped, and cut into 1 inch chunks

1 Medium Onion, diced

1 Chicken Bouillon Cube, (Maggi cube, if you can find it)

1/4 tsp Salt

1/2 tsp Freshly Ground Black Pepper

1 Tbs Red Palm Oil

 

INSTRUCTIONS:

Place a large skillet over medium heat.  Once the pan is hot, add the palm oil.  Once the oil is heated and has become completely liquid, add the onions and salt.  Cook until the onions begin to soften, about 4 minutes, stirring frequently.

Add the okra and cook for an addition 3 minutes, stirring frequently.

Add the water and chicken bouillon cube to the skillet and increase the heat to medium-high.  Stir to break up the bouillon cube.

Bring the water to a boil and reduce the heat down to medium.  Cook until all of the water has evaporated, about 25 minutes, stirring occasionally.

Serve warm.
