Africa: Ivory Coast: Ivorian Coast Salad
INGREDIENTS:
3 tomatoes, seeded and finely diced
2 red onions, finely sliced in half moons
2-5 green habanero chillies (or to taste), seeded and thinly sliced
FOR THE DRESSING:
a pinch of black pepper powder
1 Jumbo cube, crushed (or 1 Maggi chicken seasoning cube, if Jumbo is unavailable in your area)
1 tsp vinegar
1 Tbsp oil
INSTRUCTIONS:
Put vegetables in a bowl.
Whisk dressing ingredients.
Pour over vegetables and mix well.
This salad is good served with attieke, Ivorian tomato sauce and, Poulet Braise or any grilled Chicken or your choice of grilled meat or sardines. Enjoy!
