Africa: Nigeria: Nigerian Fonia (Traditional Porridge)

 

INGREDIENTS:

  • 1 cup dry fonio
  • 4 cups water
  • ½ teaspoon salt
  • 2 cups milk
  • 4 tablespoons sugar

For the decor

  • 4 tablespoons raisins
  • 2 tablespoons peanuts
  • 2 tablespoons liquid honey

Instructions

  • Wash the fonio by placing it in a large bowl and covering it with water.
  • Stir it with the fingers, then drain it.
  • Repeat this process until the water runs clear. Drain well.
  • Add the fonio into a large saucepan with 4 cups (1 liter) of water and salt.
  • Bring to a boil, then reduce the heat to low and simmer for 10 minutes, stirring constantly, until the fonio has absorbed all the liquid.
  • Stir in the milk and continue to cook over low heat, stirring occasionally, for another 20 to 25 minutes, until obtaining a thick, creamy porridge.
  • Remove from the heat, add the sugar and stir well.
  • Garnish with raisins, peanuts and a drizzle of honey, then serve immediately.
