Africa: Malawi: Malawian Nsima (Cornmeal Porridge)

 

INGREDIENTS:

3 cups water

1 cup cold water

2 1/2 cups cornmeal

 

INSTRUCTIONS:

Boil 3 cups of water. In a bowl, use one part of the cornstarch and all cold water to make a thick paste. Add the mixture to the boiling water.

Use a spatula to stir until the mixture has a thick, porridge-like texture. Cover and simmer for 15 minutes.

Turn the heat to low, open the lid, and gradually add the remaining cornstarch, stirring constantly.

Continue until the mixture thickens to the desired consistency. Cover and cook over low heat for another 5 minutes.

Stir before serving and shape as desired.
